Bulgaria is among the leading caviar producers of the EU

During the last few years, Bulgaria climbed among the leading ranks of caviar production in the European Union.

The information was given by the chief executive of the National fishing association of Bulgaria Nikolay Kisiov. He explained that Bulgaria’s only real rivals in the field of aquaculture are Italy and France.

“According to data, Bulgaria is among the leaders of caviar production”, says Kisiov, explaining that to produce caviar, the sturgeons have to mature to at least seven-eight years of age.

The exact amount of the production of sturgeons in Bulgaria is not clear, but is estimated to be nearly 1 000 tons of biomass.
